Made in the traditional Portuguese style by using our enzyme to set the curd, Queijo Fresco is a high-moisture cheese that is packaged in its own whey. This enhances its unique texture, adds herbal overtones, and highlights the flavour of the organic milk we use in all our cheeses. Very light, very moist and very versatile.
Queijo Fresco is firm enough that it can be cut into slices, but soft enough that it can be spread. Traditionally it is served on Portuguese Corn Bread, Broa, with fresh pepper and a drizzle of good olive oil.
Queijo Fresco is best when it is freshly made. We do not make it until we have received an order.
