Josef, based on Swiss Appenzeller, is aged between 5–7 months; and is named four our Head Cheese Maker’s Paternal Grandfather.  The rind is regularly washed with our proprietary blend of wine, bitters and spices. The result: a fruity aroma that complements the herbal and nutty flavour of the cheese. Perfect for a charcuterie plate, sandwiches or snacking.
